This salad is anything but boring. You have some really bold flavors – the mild licorice flavor from the fennel, the sweetness from the apple, cranberries and honey, and the light, freshness from the lemon juice and olive oil. Then you have every texture imaginable – the crisp celery, creamy goat cheese and the crunch from the sliced almonds.

Back when I would go into the office for work, my go-to for meal prep were MASSIVE salads. Salads that had ton of flavor, textures and components so that I had a meal that was light but still exciting and filling. How to Make This Fennel and Apple Salad with Goat Cheese:

  1. Prepare the dressing by adding all the ingredients to a blender and blending on high until completely smooth. Pour the dressing into a serving bowl and set aside.
  2. Arrange all the salad ingredients on a large serving platter in the order they are listed, making sure to break up the goat cheese into very little chunks.
  3. Once they’re all on the platter, give the salad a very gentle toss. 
  4. Then serve alongside the dressing.

Fennel and Apple Salad with Goat Cheese – Tips & Tricks

  • If you don’t have almonds, other nuts that would go great are walnuts and cashews!
  • If you’re looking to make this salad as an entree and need a little extra protein, grilled chicken or tofu would be great! This salad makes about 8 side servings and about 4 full entree servings.
  • If you’re looking to make this salad as an entree and need a little extra substance, adding quinoa or cooked pasta are great options!
  • When storing for meal prep or storing leftovers, store the salad and dressing separately in airtight containers and pop into the fridge. This salad will keep in the fridge for up to 3-4 days.

Ingredients

  • 6 c spring mix, lightly chopped for bite size pieces

  • 1 fennel bulb, trimmed and thinly sliced

  • 1 tbsp chopped fennel fronds

  • 2 celery ribs (depending on size), sliced diagonally 1/4-inch thick

  • 2 honeycrisp or granny smith apples (depending on size), cored and thinly sliced

  • ¼ c dried cranberries

  • ½ c sliced almonds

  • ¼ c goat cheese

  • Honey Lemon Vinaigrette:
    2 tsps honey
    2 tbsps evoo
    ½ c fresh lemon juice
    1 tsp lemon zest (about the zest of 1 lemon)
    1 tsp salt
    1/2 tsp pepper
